The ultimate idea behind a slow cooker is to make life simpler, therefore I have discovered how easy, and awesome, baked potatoes** are when made via crock pot. No more microwaved baked potatoes for this girl!
Potatoes (size and kind are up to you)
Salt and pepper
Extra virgin olive oil
1. Wash/scrub the outside of each potato to remove any dirt. Pierce the potatoes on all sides with a fork.
2. Place EACH potato on a piece of aluminium foil (they must be wrapped individually). Sprinkle with salt and pepper; drizzle with a bit of olive oil – then wrap the potato in the aluminium foil. Repeat for EACH potato.
3. Place all potatoes inside the slow cooker and turn to LOW. Cook for approximately 5 hours or until potatoes are soft when pierced with a fork.
Cheese and rice, now THAT’S easy!
**This same method can be used for cooking sweet potatoes and beets!
